Just spinach lasagna that has been one of my dishes going back to bachelorhood.
I do have a tip though. Many of you know that the pasta makers have a lasagna noodle that doesn't have to be boiled ahead of baking. I never use that. When I thaw the frozen chopped spinach in the microwave with a splash of water I don't drain it. I mix it in with the cheeses along with the excess water. I layer regular lasagna noodles uncooked and I also use more of my homemade sauce than normal. The excess water/sauce does a fine job of cooking the noodles. No need to mess with sticky limp noodles and it cuts out the extra step of boiling them.
It's an excellent dish for bachelors, widows/widowers or empty nesters. As long as you have a freezer and a microwave oven pop it in the fridge after eating your first meal. The next day it's firm and easy to cut into several servings and freeze. You can enjoy an easy meal once or twice a week for a month.
I just noticed my phone camera has a food setting. I don't know if I like it or not. Sharp focus in the center then blurs towards the edges. Maybe if I stepped back some and then cropped more would be in focus

Very nicely done, Jimmy, both the photos and recipe tips. I definitely will try the Jimmy method next lasagna bake. In the past, I always boiled the noodles and squeezed the liquid out of the thawed spinach before assembling.

That look great! The plated photo makes my mouth water. I love spinach!
Nice photos and cooking tips I haven't made lasagna for a coons-age, we do the same is just the wife and I and I like making extra and freezing too. thanks for posting.
Thanks Jill. In season I may use fresh spinach, but quality frozen spinach is at least as nutritious. Even fresh veggies lose nutrition by the time they get to you table. If they're frozen immediately after picking they retain that nutrition. At least that's what "they" say.

I just read that canned tomatoes can be better than off season fresh tomatoes because canned are processed at the height of freshness. I have not used canned tomatoes so I thought that was interesting.

I always use canned tomatoes in my sauce. But they don't do well for sandwiches
