For years I would use two DX camera a D200 and D300. The D300 with Nikon 18-200 VR and the D200 with a Nikon 12-24. When I purchased a D800 I only have 2.8 Zoom lenses and prime. I use this for portraits and landscapes. The D300 for sports and wildlife. Next week I will buy the D500 and use this for sports and wildlife with Nikon 70-200mm F/2.8 and Nikon 200-500mm F/5.6
In my opinion no one format does it all.

I have 4 SB-600 and 1 SB-800. I use the commander in the body to trigger off the units.
Two of my SB-600 were bought used and at a great price.

I'm a not Nikon user. But if you have lenses to tie you into any brand. Look at all the brands. They will give you great pictures

I have one question. Do you use multi lighting?
If the ceremony dose't allow the use of speedlites. Then you need a fast lens. I personal would use a prime.

Since this you first event shooting. I would only use one camera. The Canon T3 with 24-105mm f/4 and use Canon SZ50 as a backup
1- shoot raw + fine jpeg
2- set camera to aperture priorty
3- set flash to TTL
4- WB to auto or daylight if using the flash exclusive
5- since you live in NJ go to major camera store. If close to NYC go Adarama or B & H and but swirl flash bracket.
Also power cord with hot shoe.
This bracket, when shooting vertical images will have the shadow falling behind the subject.
6-when using modifier no farther than 15 or 20 feet
7- fill the frame
8- as most people said have extra
A-batteries for flash
B-batteries for camera
C-memory cards
Above all don't be nervous

I love all the parks in Utah. But my favorite is Monument Valley.
Great for sunrise and sunset.
Get a private guide with enclosed vehicle (because of the dust)

What I said always have backup equipment.
When I shot wedding I used multi lights. You still don't know if one or more will not work.

Ametha is correct as always.
When shooting wedding speed is the upper most thing. If it take to long to set your tripod, you subjects become impatient.
With that you lose control

I'm a Nikon user. If I was shooting with Canon, I would only buy L series lenses.
My first choice would be Canon 24-70mm (crop factor of 38mm-112mm) This will give you a lens wide enough for groups and portraits.
I would rent a Canon 70-200mm L f/2.8 (crop factor of 112mm-320mm). Great for portraits.
If you have two bodies, mount one on each body.
Also make sure you have backup batteries, memory cards, bodies and speedlites etc.
The L series is the lenses Canon produces.

To stay in your budget, you can buy a Nikon D3200 refurbished with a 18-55mm lens. this price is from Adarama. at $399
and a Nikon 55-200mm for $109
OR
Also from Adaeama refurb Nikon D5100 body only for $359.
the lenses are $99 for the 18-55mm and $109 for the 55-200mm for $109
